Tasty and Low-Cal Tuna Salad
I had some crushed pineapples left over from my Muffin Monday – Pineapple Almond Muffins and didn’t want to waste them. (Of course, that goes without saying.)
This was one of those evenings when everyone had somewhere they needed to be and would be eating at different times. So, I whipped up this simple tuna salad.
Ingredients:
3 cans (6 oz) of tuna (in water)
1/4 cup light or fat-free mayo
3 – 4 small kosher pickles, chopped
3/4 cup of crushed pineapples, drained
Directions:
Put all ingredients in a bowl and mix thoroughly.
Serve on your favorite bread or bagel or with your favorite muffin.
Enjoy!

I have never had pineapple in tuna salad but it sounds really interesting. They often add sweetcorn to it here in England which at first I thought was odd, but it actually tastes quite good. Thank you for sharing this delicious recipe with Let’s Do Brunch.
