Sweet Temptations – Pineapple Bread Pudding
WELCOME TO SWEET TEMPTATIONS!
As I have said before, I am eating from my pantry this month. I have 12 cans of pineapple and knew I needed to use some of them. This is a great recipe that is super simple and absolutely delicious.
Ingredients:
10 slices of bread
3/4 cup butter, melted
5 eggs
1 (20 ounce) can crushed pineapple, drained
1/2 cup pecans
1 cup sugar
1 1/2 teaspoons vanilla extract
3/4 teaspoon ground cinnamon
Whipped cream or ice cream (optional)
Directions:
- Toast bread on a baking sheet. Bake at 375 degrees F for 4 minutes; turn bread over and bake 4 minutes longer or until very light brown. Cut toasted bread into 1-in. cubes. Toss with melted butter; set aside. In a bowl, beat eggs until thick and lemon-colored. Add the pineapple, sugar, pecans and vanilla; mix well. Fold in bread cubes.
- Pour into a greased baking dish. Sprinkle with cinnamon. Cover and bake at 350 degrees F for 30-35 minutes or until bubbly and golden brown. Serve warm with whipped cream or a scoop of ice cream.
