Sweet Temptations – Lemon Squares

This week I thought I would share a recipe for lemon squares.  These are amazing and easy to make.  They also make a great Valentine gift for those who don’t like (or can’t eat) chocolate.

 

 

Ingredients:

  • 1 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1 sticks butter, melted
  • 2 eggs
  • 1 cups sugar
  • 1 Tbsp flour
  • 3 Tbsp lemon juice
Directions:
  1. Preheat oven to 350 degrees. Mix flour and powdered sugar. Melt butter and mix with flour and sugar. Press into a buttered 8 x 8 pan. Bake for 18 – 20 minutes.
  2. Beat eggs, sugar, flour and lemon juice. Pour over baked crust. Bake for 20-25 minutes.
  3. Cool and sprinkle with more powdered sugar. When completely cool cut into small squares and serve.
  4. Enjoy!

This recipe can easily be doubled.
