Sweet Temptations – Apple Cake
WELCOME TO SWEET TEMPTATIONS!
My mom made this moist and tasty cake this year for her birthday. We enjoyed it after a delicious dinner which she also prepared for all of us. Yum! Yum!
Ingredients – Cake:
3 eggs
2 cups sugar
1 cup vegetable oil
1 tsp vanilla extract
2 cups all-purpose flour
2 tsp ground cinnamon
1 tsp baking soda
1/2 tsp salt
4 cups tart apples (peeled and chopped)
3/4 cup chopped pecans (optional)
Directions – Cake:
Beat eggs, sugar, oil and vanilla in large mixing bowl.
Combine flour, cinnamon, baking soda and salt; add to egg mixture; mix well.
Fold in apples and pecans.
Pour into greased 13″ x 9″ x 2″ baking dish.
Bake at 350 degrees for 55-60 minutes or until a toothpick inserted near the center comes out clean.
Cool a wire rack.
Ingredients – Frosting:
1-8 oz package cream cheese, softened
2 tsp butter or margarine, softened
2 cups confectioners’ sugar
Directions – Frosting:
Beat cream cheese and butter in small bowl.
Add confections’ sugar and beat until smooth.
Spread over cake.
Yields 12-16 servings.
Enjoy!
Refrigerate leftovers…if there are any!

Wow! I love apple pies, especially with a scoop of vanilla ice cream. Your mom’s look scrumptious and it didn’t need any ice cream.
Incidentally, with a number of German- and Swiss-owned eateries around here in Panglao Island, I assumed a couple would have apple strudel on their dessert menu. I was wrong. I have to special order an entire one for like P1,500.
