Stuffed Red Peppers
My family loves stuffed red peppers, but I seldom think of making them. Today I did!
Following is an easy and tasty recipe:
3 red peppers
1 pound lean ground beef (browned and drained)
1 can (15 oz.) spanish rice
2 tablespoons catsup
Cut red peppers in half and remove pulp and seeds from the center.
Steam peppers in 1-inch of water for 5 minutes. Cool.
Brown ground beef and drain off excess fat.
Stir in rice and catsup.
Spoon ingredients into pepper halves.
Place in baking pan and bake at 350 degrees for 25 minutes.

Stuffed bell peppers are one of my “go to” meals. Yours looks so simple. I have never had canned rice but….by golly…I should get some. That would be really great if I had some already cooked ground beef in the freezer. Easy!
