Strawberry Muffins with a Sweet Topping

 Welcome to Muffin (and Cupcake) Monday!
 
 
There sat a lone packet of strawberries and cream oatmeal on the kitchen table. I opened the refrigerator and there were two Yo-Crunch strawberry parfait cups just waiting for someone to snatch them up. So I did and created the following muffin recipe.  But wait, there were some Lindt Lindor white chocolate truffles left over from the holidays sitting in the candy dish.  I thought ‘I’m sure I can use them as well’!  So I did and created a delicious topping for the muffins!

 

 

Ingredients and Directions

Preheat oven at 350 degrees.

Coat muffins with non-stick spray.

Mix in bowl:

2 cups baking mix

2 - Yo-Crunch Strawberry Parfait Cups

1/2 cup + 2 tablespoons vanilla soy milk

1 packet strawberries and cream oatmeal

2 tablespoons sugar

Fill muffin tins 3/4 full of muffin batter.

Bake 20-25 minutes at 350 degrees.

Cool.

Then melt two Lindt Lindor white chocolate truffles in the microwave for 50 seconds or until completely melted.

Spoon over top of muffins.

Enjoy!
