Quick and Easy BBQ Cups
It took about 15 minutes from start to finish for me to make these since I had browned the ground beef the day before. My son and husband’s favorite were the one’s topped with American cheese. My favorite were the ones topped with the sharp cheddar cheese.
1 lb lean ground beef
1/2 cup BBQ sauce
1 tsp spicy brown mustard
1 can refrigerator biscuits
cheese(s) of choice (I used slices of swiss, shredded sharp cheddar and slices of american)
Brown meat, drain grease
Add BBQ sauce and mustard to meat, stir well then set aside
Place biscuit dough into ungreased muffin cups, pressing dough up sides to edge of cups
Spoon meat mixture into cups
Top with your choice of cheese
Bake 12 minutes at 400 degrees

These are also really good done with taco meat. I add a can of whole kernel corn and a pkg of tack seasoning to the meat, and simmer until the liquid is evaporated. Put the meat in the cups and add cheese, just as you’ve done. Good either way!

I make something very similar to this that I call Easy Peasy Beefy Cheesy Biscuit Cups, but the twist with the brown sugar and different cheeses makes me want to go make some right now! I will HAVE to try this for some cookouts this summer!
