Opera Cream Muffins
Here’s the muffin recipe I whipped up with the second kind of easter eggs I purchases for a dime after Easter…opera cream. Did I mention, I love opera cream candy?
Ingredients
4 cups Jiffy all-purpose baking mix
1 cup + 2 tablespoons milk
1 egg
4 – 3.5 oz vanilla pudding cups (I used sugar-free because that what I had in the pantry)
1/4 cup of sugar
1/2 teaspoon vanilla
4 Papas opera cream eggs (chopped)
What to do
Preheat over to 350 degrees.
Coat muffin tins with non-stick spray.
Mix all ingredients in bowl.
Fill tins 2/3 full with batter.
Bake 25-30 minutes.
I had an extra opera cream egg, so added a “pat “of it on top of some of the muffins after they cooled slightly.
Makes 16-18 muffins.

I have never heard of Opera Creme eggs! Where would one get them?

I found these at the Rempke store down the street but during the Easter season they can be found almost anywhere that sales candy…Kroger, Walgreens, CVS to name a few.
So interesting! I need to prowl around and see if I can find the key ingredient for this recipe.
