Muffin Monday – Whole Wheat Muffins
I whipped up a batch of Whole Wheat Muffins this week. It’s the first time I’ve ever used whole wheat flour in a recipe. (I bought a 5 lb. bag, so I’m sure I’ll be trying other recipes using whole wheat flour in the near future.)
These muffins turned out delicious! Not too sweet!
Add a piece of fruit or a cup of yogurt and you have a filling and healthy breakfast.
Ingredients:
1 cup sifted all purpose flour
1 cup whole wheat flour plus 2 tablespoons
1/2 teaspoon salt
1 tablespoon plus 1 teaspoon baking powder
1/2 cup brown sugar (packed)
1 cup milk
2 eggs slightly beaten
1/3 cup vegetable oil
1/4 cup of applesauce
What To Do:
Preheat oven to 425 degrees.
Mix flour, salt baking powder and brown sugar in a large bowl.
Make a “well” in the center of the mixture.
Add milk, eggs, oil and applesauce.
Stir until combined.
Spoon batter into muffin tins coated with non-stick spray.
Bake in oven 15 minutes.
Enjoy right out of the oven!
Makes 12-15 muffins.

I bake solely with whole wheat flour now (unless it calls for bread flour or cake flour) King Arthur brand makes an Unbleached Whole Wheat Flour that can be used as a replacement for AP flour in all recipes. You cannot taste the difference!

You can substitute whole wheat flour for cake and bread flours too! I always take out 2 Tbl /cup whole wheat flour used then…
Some suggestions are….
1 cup FLOUR, Cake =3/4 cup all purpose flour plus 2 tablespoons cornstarch
2 cups FLOUR, Pastry =1 1/3 cup all purpose flour plus 2/3 cup cake flour
1 cup FLOUR, Bread =1 cup all purpose flour

Good to see you trying out some whole wheat flour! I typically use whole wheat pastry flour when baking muffins or even cookies or cakes. You truly can’t tell the difference unless you’re looking for your baked goods to be white (like when I tried to do red, white and blue muffins for the 4th…).

I love whole wheat flour! We use it exclusively at our house. We usually buy white whole wheat flour as it has a finer texture which is what our family prefers. Stone ground wheat flour tends to make things gritty.
A good rule of thumb when substituting…Take away 2 Tbl whole wheat flour per cup. Also, if you are using it in yeast recipes you’ll need to add 2 tsp vital wheat gluten/cup whole wheat flour to help with rising.
