Muffin Monday – Whole Wheat Butterscotch Muffins
Welcome to Muffin (and Cupcake) Monday!
I had a four-pack of butterscotch pudding just hanging out in the kitchen pantry. It was time to put it to good use!
Ingredients:
1 cup whole wheat flour
1 cup baking mix
4 -3.5 oz butterscotch pudding cups
1/2 cup milk
1-2 tablespoons of brown sugar
What To Do
Preheat oven to 350 degrees.
Spray muffin tins with non-stick spray.
Mix dry ingredients in a large bowl.
Add pudding and milk then stir just to blend.
Spoon batter into muffin tins, filling 2/3 full.
Sprinkle brown sugar over top of the muffins.
Bake or 20-25 minutes.
Makes 8 -10 muffins.

I have not been baking as many muffins as I used to. I think that is because I have been baking cookies. I went back a bit and found muffins, I love and shared them.

Hi Kim! Baking mix is a multi-purpose mix made up of flour, sugar, salt, vegetable shortening and baking soda. I use Bisquick or Jiffy. It is sold in the same aisle as the flour and sugar at the grocery. Thanks so much for stopping by!
