Muffin Monday – Pumpkin Muffins
Welcome to Muffin (and Cupcake) Monday!
My mom made a batch of these muffins last week. They are so moist and delicious with or without icing!
Ingredients – Muffins
1 cup all-purpose flour
3/4 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
2 eggs, lightly beaten
1 cup canned pumpkin
1/2 cup vegetable oil
1/2 cup honey
1/3 cup water
1 cup miniature chocolate chips
Ingredients – Icing:
1package (8 oz) cream cheese, softened
1/4 cup butter or margarine, softened
1 tsp vanilla extract
2 cups confectioners’ sugar
Directions – Muffins:
Preheat oven to 350 degrees.
Spray muffin tins with non-stick cooking spray.
Combine dry (first seven) ingredients in a large bowl (bowl 1).
Combine eggs, pumpkin, oil, honey and water, mix well (bowl 2).
Stir ingredients in bowl 2 into bowl 1 just until combined.
Fold in chocolate chips.
Fill muffin tins 3/4 full.
Bake 20-25 minutes.
Cool 10 minutes before removing muffins to wire rack to cool completely.
Directions – Icing
Beat cream cheese, butter and vanilla in a small bowl until fluffy.
Gradually beat in confectioners’ sugar until smooth.
Ice muffins and enjoy!
Makes 12-16 muffins
