Welcome to Muffin (and Cupcake) Monday!

I remembered to buy crushed pineapples and chopped almonds at the grocery to make these muffins but forgot to buy eggs. So, I substitued a four ounce pudding cup for the egg and they turned out delicious (and saved me from making another trip to the store)!
Ingredients:
2 cups all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup chopped almonds
1 – 4 oz. sugar-free vanilla pudding cup (or one slightly beaten egg)
1 cup crushed pineapple with juice
1/4 cup vegetable oil
Directions:
Coat muffin tins with non-stick spray.
Preheat oven to 400 degrees.
Stir dry ingredients (flour, sugar, baking powder and salt) and almonds together in bowl #1.
Make a “well” in center of dry ingredients.
Stir liquid ingredients (pudding (or egg), pineapple and vegetable oil) together in bowl #2.
Pour liquid ingredients into “well.”
Stir just to combine. (Batter will be slightly lumpy.)
Fill muffin tins 2/3 full.
Bake about 20 minutes or until golden.
Makes 10-12 muffins.
