Muffin Monday – Peanut Butter Muffins

Thanks for joining us for another week of Muffin Monday. This week I whipped up a batch of peanut butter muffins. Alexandra loved these muffins with a spread of Nutella.
Ingredients
Sift and combine the following in bowl #1:
2 cups flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
Combine the following until fluffy in bowl #2:
2/3 cup of peanut butter
2 eggs
1/4 cup of butter
Slowly blend one cup of milk into bowl #2.
Add flour mixture in bow#1 to peanut butter mixture in bowl #2
Stir just enough to blend.
Line muffin tins with cupcake holders.
Fill each cupcake holder tins 2/3 full.
Bake at 350 degrees for about 24 minutes.

I can’t thank you enough for this recipe. I was looking for a peanut butter muffin recipe and then I saw your post and it sounds like the delicious peanutty taste I want. I am making these this week for sure and will let you know how it goes. I’m thinking of putting a dollop of jelly into some of them too.
