Muffin Monday – Peanut Butter Fudgy Muffins
As I have said before, I love, love, love peanut butter! Well, here is a great muffin recipe that uses not only peanut butter but my other favorite ingredient; chocolate.
Ingredients:
- 1/3 cup semi-sweet chocolate chips
- 1 tablespoon unsalted butter
- 1/4 teaspoon of salt
- 1 & 2/3 cup flour
- 1/2 cup light brown sugar; packed firmly
- 1 tablespoon baking powder
- 3/4 cup of milk
- 1/3 cup oil
- 1 & 1/2 teaspoon of vanilla
- 1/2 cup peanut butter
- 1 slightly beaten egg
Directions:
- Preheat oven to 400 degrees. Spray muffin tins with non-stick cooking spray or line with cupcake papers.
- In saucepan, heat butter and chocolate chips, stir constantly until melted. Remove from heat and set aside.
- Combine sugar, flour, salt and baking powder in a large bowl.
- In a separate bowl, mix milk, oil, peanut butter, vanilla and egg.
- Combine both mixtures, mixing well. Pour one-half of the batter onto muffin tins. Spread chocolate mixture evenly among the muffins, at least a teaspoon in every muffin tin. Try not to get the chocolate on side of the muffin tins. Pour the remaining batter over the chocolate filling. Bake approximately 20 to 25 minutes, until light brown.
