Muffin Monday – Peach Muffins
Welcome to Muffin (and Cupcake) Monday!
I woke up bright and early this morning (3:15 a.m. to be exact) and ready to try a new muffin recipe. It turned out just “peachy!”
Ingredients:
1-1/2 cup all-purpose baking mix
1/4 cup whole wheat flour
1/2 cup sugar
1/2 teaspoon nutmeg
1 egg, beaten
1/3 cup butter, melted
1/2 cup milk
1 15-oz can of sliced peaches, drained and diced
What To Do:
Preheat oven to 350 degrees.
Spray muffin tins with non-stick spray.
Combine flour, sugar, nutmeg in a large bowl. Bowl #1
Mix egg, butter, milk and peaches in a smaller bowl. Bowl #2
Stir liquid ingredients (Bowl #2) into dry ingredients (Bowl #1).
Fill muffin tins 3/4 full making sure to distribute peach bits.
Bake 20-25 minutes.
Makes 10-12 muffins.
