My son eats oatmeal almost every morning for breakfast so I knew he would really enjoy these oatmeal muffins. (He did!) Served them up right out of the oven. They are really good served warm, cut in half, with butter and brown sugar in between the halves. Delicious!
Sift together in bowl #1:
1 cup all purpose flour
1 tsp baking powder
1 tsp salt
1/2 tsp baking soda
Beat together in bowl #2:
1 cup instant oats
1 cup buttermilk
1/3 cup soft butter
1/2 cup brown sugar, packed
Stir dry ingredients (bowl #1) into ingredients in bowl #2.
Fill muffin tins that have been greased with non-stick spray 2/3 to 3/4 full.
Bake for 20-25 minutes or until golden brown in a 400 degree preheated oven.
Makes 10-12 muffins.
