Welcome to Muffin (and Cupcake) Monday!

I usually only buy maraschino cherries during the holidays. This week, however, I bought them to make muffins. So glad I did. These muffins are delicious!
Ingredients:
2 cups all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup very well drained and finely chopped maraschino cherries
1 egg, slightly beaten
1 cup milk
1/4 cup vegetable oil
Glaze: (optional)
1/4 powdered sugar
2-3 teaspoons marashino cherry juice
Directions:
Coat muffin tins with non-stick spray.
Preheat oven to 400 degrees.
Stir dry ingredients (flour, sugar, baking powder, salt) and marashcino cherries together in bowl #1.
Make a “well” in center of dry ingredients.
Stir liquid ingredients (egg, milk and vegetable oil) together in bowl #2.
Pour liquid ingredients into “well.”
Stir just to combine. (Batter will be slightly lumpy.)
Fill muffin tins 2/3 full.
Bake about 15-20 minutes or until golden.
Glaze (optional) – mix powdered sugar with maraschino cherry juice, then drizzle over muffin once they’ve cooled slightly.
Makes 12 muffins.
