Muffin Monday – Lemon Poppy Seed Muffins
Welcome to Muffin (and Cupcake) Monday!
I made Lemon Poppy Seed mini-muffins this week. I love the flavor of these muffins and I really like the size of the mini-muffins. Each mouthful is a delicious little bite of yum.
Ingredients:
2 cups all-purpose flour
3/4 cup white sugar
1/4 cup poppy seeds
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup lemon flavored yogurt
1/4 cup vegetable oil
1 tablespoon grated lemon zest
1/3 cup lemon juice
3 tablespoons white sugar
Directions:
Preheat oven to 400 degrees for regular size muffins and 350 degrees for mini-muffins.
Coat muffin tins with non-stick spray.
In a large bowl combine flour, 3/4 cup white sugar, poppy seeds, baking powder, baking soda and salt.
In a separate bowl, mix the eggs, yogurt, vegetable oil and lemon zest. Blend well and pour into the flour mixture. Stir until just combined, do not overmix.
Spoon batter into the prepared muffin tins. Bake at 400 degrees for 20 minutes for regular size muffins or bake at 350 degrees for about 10 minutes for mini-muffins. Watch for the edges to turn brown and they should be done.
Next, combine the lemon juice with the remaining 3 tablespoons white sugar. Stir into sugar dissolves. After the muffins are baked, pierce the tops several times with a toothpick. Pour about 1 tablespoon of the lemon juice and sugar mixture over the top of the each regular sized muffin and about 1/2 teaspoon over the mini-muffins. Let muffins cool in the muffin tin for about 10 minutes before removing them from the pan. Enjoy!

These muffins look delicious! I’ve been thinking to try a lemon-poppy dessert one of these days. Love that they’re mini- mini muffins are my new favorite thing. Eating one is somehow so much less daunting and so guilt free compared with a full sized muffin!
