Muffin Monday – Gingerbread Muffins
Welcome to Muffin (and Cupcake) Monday!
I love the smell and taste of gingerbread. These muffins deliver both a delicious aroma and a sweet delectable taste. Give them a try, you won’t be sorry.
Ingredients for muffins:
- 1/4 cup packed brown sugar
- 1/2 cup molasses
- 1/3 cup milk
- 1/3 cup vegetable oil
- 1 egg
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
Ingredients for topping:
- 1 1/2 cups powdered sugar
- 2 tablespoons milk
- Heat oven to 350°F. Grease or line with paper cups a 12-cup muffin tin.
- In large bowl, beat brown sugar, molasses, milk, oil and egg. Stir in remaining ingredients, just until flour is moistened. Divide batter evenly among muffin cups.
- Bake 18 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan to cooling rack. Cool completely, about 30 minutes.
- Mix powdered sugar and milk until well blended. Add additional milk to thin glaze if necessary. Drizzle glaze over muffins.
- Enjoy!

I’ve never had gingerbread muffins before. They sound great. My mom would really love them though since she’s a huge gingerbread fan. I will make these for her some time.

I just made these for breakfast and they are so good! The only change I made was to sprinkle them with brien sugar before baking, instead of the frosting. Yum!
