Muffin Monday – Coconut Lemon Muffins
Welcome to Muffin (and Cupcake) Monday!
These delicious muffins are like a burst of sunshine on a cold, rainy day. Or any other day, for that matter.
Ingredients – Batter:
1-3/4 cups flour
3/4 cup sugar
1 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1 cup lemon yogurt
1 egg
1/3 cup melted butter
1 tablespoon lemon juice
1/2 cup flaked coconut
Ingredients – Topping:
1/3 cup lemon juice
1/4 cup sugar
1/4 cup coconut, toasted
Directions- Batter:
Preheat oven to 400 degrees.
Coat muffin tins with non-stick baking spray.
Combine dry ingredients in a bowl (bowl #1).
Beat yogurt, egg, butter and lemon juice in another bowl (bowl #2) until smooth.
Add ingredients in bowl #2 to bowl #1.
Stir just until mixed together.
Fold in coconut.
Fill muffin tins 2/3 full of batter.
Bake 18-22 minutes.
Cool for 5 minutes then remove to wire rack.
Directions – Topping
Combine lemon juice and sugar in saucepan.
Cook and stir until sugar is dissolved.
Stir in coconut.
Poke 6-8 holes in each muffin top using a toothpick.
Spoon coconut mixture over muffins.
Makes 12 muffins.
