Muffin Monday – Candy Cane Muffins
Welcome to Muffin (and Cupcake) Monday!
I’d never heard of Candy Cane Pudding before, but it sounded good and it was 75% off at the store today. I knew there had to be a muffin in that package somewhere!
Ingredients:
2 cups all-purpose baking mix
1 – 3.4 oz package of Jell-o Candy Cane Pudding Mix
2 cups + 2 tablespoons milk
1 tablespoon sugar
1/4 cup peppermint bark candy, chopped (optional)
Directions:
Preheat oven to 350 degrees.
Spray muffin tins with non-stick cooking spray.
Combine pudding mix and two cups milk together using a whisk.
Refrigerate for five minutes or until pudding is set.
Combine baking mix, sugar and peppermint bark in large bowl.
Add pudding and 2 tablespoons milk.
Mix until combined.
Bake 22-27 minutes.
Enjoy!

Wow! I have never thought to make Candy Cane muffins before. I love peppermint, so these might even taste good. I’ll have to take your word for that and maybe go buy some of the leftover candy canes at the store right now. These would be fun to have at a Christmas party so I think I’ll have to pin them and try next year!
