Muffin Monday – Breakfast Muffins
Welcome to Muffin (and Cupcake) Monday!
My son requested muffins with cinnamon sugar this week. So, I deviated from the whole wheat flour kick I was on and made these for him.
He enjoyed one right out of the oven. His comment, “darn good!” Hope you think they are “darn good” too!
Ingredients
1-1/2 cups baking mix
1/4 teaspoon nutmeg
1/3 cup softened butter or margarine
1/2 sugar
1 egg
1/2 cup milk
What To Do
Preheat oven to 350 degrees.
Spray muffin tins with non-stick spray.
Combine baking mix and nutmeg in a medium bowl. (Bowl #1)
Beat together butter, sugar and egg in a larger bowl. (Bowl #2)
Alternately add dry ingredients (Bowl #1) and 1/2 cup of milk to liquid ingredients (Bowl #2) until all is worked in.
Fill muffin tins 2/3 full of batter.
Bake for 20-25 minutes or until tops are golden brown.
Makes 6-8 muffins.
Topping
While muffins are baking…
Mix together 1/2 cup sugar and 1 teaspoon cinnamon.
As soon as muffins are removed from oven, spray muffin tops with spray butter then roll in cinnamon sugar mixture.

This recipe is confusing. The directions say mix baking mix, nutmeg, and sugar together. Then mix butter, sugar, egg, and milk. How much milk? The ingredient list doesn’t list any milk. And I mixed the sugar with the baking mix… I’m sitting here wondering what to do…
