Welcome to Muffin (and Cupcake) Monday!

Most people watch a movie or read a book when they can’t sleep. Not me. I couldn’t sleep so I got out of bed at 3 a.m. and starting baking muffins!
Ingredients:
1 cup all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 cups bran flakes (slightly crushed)
1 egg, slightly beaten
1/2 cup milk
1/4 cup vegetable oil
Directions:
Coat muffin tins with non-stick spray.
Preheat oven to 400 degrees.
Stir dry ingredients (flour, sugar, baking powder and salt) and bran flakes together in bowl #1.
Make a “well” in center of dry ingredients.
Stir liquid ingredients (egg, milk and vegetable oil) together in bowl #2.
Pour liquid ingredients into “well.”
Stir just to combine. (Batter will be slightly lumpy.)
Fill muffin tins 2/3 full.
Bake about 20 minutes or until golden.
Makes 4-6 muffins.

I bet these would be good using raisin bran cause my hubby likes raisins. Of course they could be added as an optional too. Very nice!
