Muffin Monday – Applesauce Muffins
Boy, did the house smell great while I was baking these muffins! And, they tasted as good as they smelled!
Applesauce Muffins
Preheat oven to 400 degrees.
Combine the following dry ingredients together in a bowl:
3 1/2 cups of unsifted flour
1/2 cup sugar
2 tablespoons + 2 teaspoons baking powder
1 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon ginger
Add
2 eggs, beaten
1 cup milk
2/3 cup melted butter
1 1/2 cups applesauce
Stir until blended.
Line muffin tins with cupcake liners.
Fill cupcake liners 3/4 full.
Bake for 20-25 minutes at 400 degrees.
Makes 16-20 muffins.
Enjoy!
