Muffin Monday – Chocolate Chip Ice Cream Muffins
This most difficult thing about this recipe is making sure you don’t eat up all the ice cream before you make the muffins! (What can I say, ice cream is one of my favorite things to eat!)
Ingredients
2 cups all-purpose baking mix
2 cups softened chocolate chip ice cream (If you want to go all out, use one of Oprah’s favorite things… Graeter’s Ice Cream!)
1/2 cup chocolate chips (optional)
Mix all ingredients together.
Fill muffin tins 2/3 full with batter.
Bake 15 minutes at 400 degrees.
My “official” tester’s (my son) statement after he ate one…”That was great, but there was no ice cream in my muffin!”

Seriously? If I had any ice cream in the house I would be making these as we speak. Then I’d probably eat the entire batch in one sitting.
I hope you get the chance to make them soon, Allison. They really are great. (And, I usually put some in the freezer as soon as they cool a bit so I don’t sit there and eat the entire batch in one sitting!)

These look and sound fabulous! You can tell by the picture that the texture is so fine, I will have to try them. I agree, I am an ice cream nut too, but I think I could leave that much just to try these lucious looking muffins.
