Crab Stuffed Portobello Mushrooms

The filling can be made with fresh, canned, or imitation crab-meat.  If you use canned crab-meat make sure to rinse it first.  Also, when cleaning your mushrooms, don’t run them under water.  They are like sponges and will absorb it; just wipe them clean with a damp paper towel.


  • 1 cup crab-meat
  • 1/2 cup cream cheese
  • 1/2 cup fresh parsley leaves, chopped
  • 1/2 cup green onions, chopped
  • 4 tablespoons Parmesan cheese
  • 4 portobello mushroom caps
  • 1/2 cup bread crumbs
  • 1/2 cup cheese (I used a combination of shredded Cheddar and Parmesan)


    Preheat the oven to 375 degrees F.

    1. Combine the crab-meat, cream cheese, parsley, green onions and Parmesan. Season with salt, pepper and garlic powder, to taste.
    2. Stuff the mushroom caps with the mixture and top with bread crumbs and cheese.
    3. Bake for about 15-20 minutes, or until the filling and cheese is hot and melted.
    4. Enjoy!
