Cheese and Broccoli Casserole
Thought I would try a meatless casserole for a change. Here’s what I came up with. I like this recipe because it can be prepared ahead of time. Plus it’s quite tasty!
Ingredients:
10 slices of whole wheat bread
4 cups shredded cheddar cheese
1 – 10 oz. pkg frozen chopped broccoli, cooked and drained according to directions on the box
8 eggs (slightly beaten)
4 cups milk
1/2 tsp salt
What To Do:
Cut crusts off bread.
Put broken up crusts in 13 x 10 inch dish (coated with non-stick spray).
Top with 3 cups of cheese then broccoli.
Place remaining bread on top.
Combine milk, eggs and salt then pour over bread.
Cover and refrigerate at least 6 hours.
Bake uncovered 50 minutes at 325 degrees.
Remove from oven and sprinkle with remaining cup of cheese.
Return to oven and bake 5 additional minutes (or until cheese is melted).
Enjoy!

That looks great! I will be trying it. I try to steer away from casserole recipes because they usually have canned soups, but I like that this one doesn’t.
