Can’t-Get-Enough-Vanilla Muffins
Earlier I made a batch of Can’t-Get-Enough-Chocolate Muffins and shared that recipe with our readers. So, it’s only fair that I should make a batch of Can’t-Get-Enough-Vanilla Muffins for all of you vanilla lovers out there. (I’m one of them!)
Preheat oven to 350 degrees.
Coat muffin tins with non-stick spray.
Ingredients
2 + 1/2 cups baking mix
2 – 3.5 oz cups of vanilla pudding (I used the sugar-free)
1 cup vanilla soy milk
1/2 teaspoon vanilla
1 medium banana (mashed)
4 – white chocolate Lindt Lindor truffles (chopped)
What To Do
Combine all ingredients in a large bowl and mix.
Fill muffin tins 3/4 full.
Bake for 20-25 minutes at 350 degree.
Enjoy warm right out of the oven or let cool slightly and top the muffins with a couple of melted white chocolate Lindt Lindor truffles. Just melt two Lindt Lindor white chocolate truffles in the microwave for 50 seconds or until completely melted and spoon over the tops of the muffins.

Those vanilla muffins sound amazing, I NEED to taste that Lindt ball icing.
I’ve shared my recipe for maple-almond cakes, I count them as muffins. They’re sweetened with maple syrup rather than sugar for an interesting change.
