Breakfast Casserole for Dinner

Breakfast Casserole

I was in the mood for breakfast food so I bought a roll of sausage and a carton of eggs while at the grocery. When I got home and was putting the groceries away, I remembered the bag of OreIda potatoes in the freezer. I knew I could make something pretty tasty with just those three ingredients. But there was a bag of shredded cheese and a carton of sour cream in refrigerator. Now I knew I could make something delicious.  So I went to work and made a casserole my family loved!
16 oz roll of sausage (mild, spicy or hot)
28 oz OreIda Potatoes O’Brien with onions a peppers (thawed)
1 cup sour cream
4 eggs
2 cups shredded cheddar cheese
What To Do
Brown sausage in a non-stick dutch oven (coat with non-stick spray first).
Add potatoes, sour cream, 1 cup of cheese and eggs (beaten).
Cook for about 5 minutes.
Then pour mixture into a 13″ x 9″ casserole dish (coated with non-stick spray).
Top mixture with remaining cheese.
Bake at 350 degrees for 25 minutes.
