BBQ Cheeseburger Casserole
I’ve had several requests for this recipe. I hope you enjoy it as much as my family does.
1 lb lean ground beef
1 small red pepper, chopped
1 medium onion, chopped
1/3 cup barbecue sauce ( I like Sweet Baby Rays barbecue sauce)
1 1/2 cups shredded Cheddar cheese
1 cup Bisquick mix
1 cup milk
2 eggs
Pre-heat oven to 400°F. Spray bottom and side of 9-inch pie plate with Pam. Brown ground beef with onion and pepper; drain. Stir in 1/3 cup barbecue sauce. Spread in pie plate. Sprinkle with 3/4 cup of the cheese. In a separate bowl, stir Bisquick, milk and eggs until blended. Pour over ground beef mixture. Bake uncovered for 25 minutes. Sprinkle with the remaining cheese. Bake about 5 more minutes or until knife inserted into center comes out clean. Serve with additional barbecue sauce.

We LOVE Sweet Baby Ray’s BBQ sauce. I do believe it is the best! (IMHO!!) This sounds so yummy. I am going to save it for a future meal plan! Thanks for sharing!
